From the farmhouse Kitchen…. Slow Cooker Chicken

Sometimes the simple meals are the most delicious and rewarding to indulge in. I have realised the need to get back to simple but tasty meals that are nutritionally good. This meal is so easy and once it is in the slow cooker you can forget about it.

Place a whole onion inside your chicken (chook) or stuff it if you prefer. Then place 3 tin foil balls in the bottom of the slow cooker to rest the chicken on so it doesn’t catch at the bottom. Rub some oil, salt, mixed herbs and garlic onto your chook. Place in slow cooker on foil and then squeeze some lemon juice over the chicken. Looks yummy already and it isn’t even cooked yet.

Place on high and leave to cook for about 3 hours or slow cook it for about 6 hours.

This chicken  is really tender and juicy cooked this way – if you want a crispier skin then you might need to brown it in the oven.

    Sounds lovely – it will be a good recipe for when we go to Kruger in October – I always take my slow cooker with me. You have reminded me of the yummy jammy squares I used to make – will be making them tomorrow when a few people will be here for tea.
