afternoon treats…

These yummy jam squares are so easy to make and are a lovely afternoon treat. My Mom used to make these all the time when we were kids and they were always a favourite of mine. Usually she made them with apricot jam (which I prefer), but somehow my family enjoy strawberry jam more.

Shortcrust Pastry

  • 3 cups flour
  • 2/3 cup castor sugar
  • 250g butter or marg cubed
  • 2 egg yolks
  • 2 Tbsp cold water

Mix flour and sugar – chop in butter and mix till it is like fine crumbly mixture. add eggs and water to form a dough. Knead dough till smooth then wrap and place in fridge for half an hour.

Press half the mixture into a baking tray, Spread dough with the jam of your choice. Take the rest of the dough and grate it over the jam till covered. Place in oven at 180 degrees and bake till slightly brown. Cut into slices and enjoy with a cuppa tea or coffee.

It is a cold and wet afternoon here in Melbourne and so hubby and I are curled up under our throws watching a Dvd and we are going to enjoy that cuppa with a jam square.
